  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press tofu between clean kitchen towels for 15 minutes.
  2. Cut tofu into 1-inch cubes and toss with cornstarch until coated.
  3. Heat oil in a skillet over medium-high heat; add tofu in a single layer.
  4. Cook until golden brown on each side (about 6-8 minutes total), then remove from skillet.
  5. In the same skillet, sauté bell peppers and onions for about 5 minutes until tender.
  6. Add garlic and ginger; cook for another 30 seconds.
  7. Toss in pineapple chunks; caramelize for about 2-3 minutes.
  8. Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over skillet ingredients.
  9. Return crispy tofu to the pan; stir gently until well combined.
