  • 20 oz cheese tortellini
  • 1 pint cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 cup kalamata olives
  • 1 cup fresh mozzarella balls
  • 1/2 cup salami or pepperoni
  • 2 cups baby spinach or arugula
  • 1/4 cup fresh basil
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in salted boiling water according to package directions until al dente. Drain and rinse under cold water.
  2. In a jar, combine olive oil, vinegar, mustard, honey, minced garlic, oregano, salt, and pepper. Shake until emulsified.
  3. Toss warm tortellini with half of the dressing and let it cool for about 10 minutes.
  4. Add tomatoes, cucumber, onion, olives, mozzarella, salami, spinach, and basil to the bowl with tortellini. Pour remaining dressing over and mix gently.
  5. Cover and refrigerate for at least two hours before serving.
