  • 2 boneless, skinless chicken breasts
  • 4 slices cooked turkey bacon
  • 1 ripe avocado
  • 2 slices pepper jack or cheddar cheese
  • 2 brioche buns
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce (from canned chipotles in adobo)
  • ½ tsp lime juice
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • ¼ cup pickled jalapeños

Instructions

  1. Pound chicken breasts to an even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat the grill to medium-high heat and cook chicken for 4–5 minutes per side until it reaches an internal temperature of 165°F (74°C). Top with cheese during the last minute to melt.
  3. Mix mayonnaise, adobo sauce, and lime juice in a small bowl for chipotle mayo.
  4. Toast brioche buns until golden brown.
  5. Assemble the sandwich by spreading chipotle mayo on both sides of the buns and layering with avocado, grilled chicken with melted cheese, turkey bacon, and pickled jalapeños.
