  • 1/2 pound medium shrimp, peeled and deveined
  • 1/2 pound boneless chicken breast, cut into bite-sized pieces
  • 1/2 pound andouille sausage, sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • Cajun seasoning

Instructions

  1. Boil salted water in a large pot and cook the pasta until al dente.
  2. In a bowl, toss shrimp and chicken with Cajun seasoning. Sear the chicken in a skillet until golden; remove.
  3. Cook the shrimp until pink; remove.
  4. Sauté the sausage until browned; remove.
  5. Sauté bell peppers and onion until softened; add garlic.
  6. Make the roux with butter and flour; whisk in chicken broth and cream gradually.
  7. Stir in Parmesan cheese and seasonings; combine with cooked proteins and vegetables.
  8. Toss in cooked pasta; adjust sauce consistency with reserved pasta water as needed.
  9. Garnish with parsley and serve.
