  • 16 ounces cremini mushrooms
  • 3 cloves garlic
  • ½ cup raw walnut halves
  • 1¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans
  • ½ cup panko breadcrumbs

Instructions

  1. Sauté chopped onion and sliced mushrooms over medium-low heat until softened (about 15 minutes). Add minced garlic and spices; cook for 2 more minutes.
  2. Preheat oven to 400°F and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Add the sautéed mixture along with barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper. Process until combined but still textured.
  4. Form the mixture into patties using about ½ cup per burger (yielding approximately eight patties).
  5. Bake patties on the prepared sheet for 30-35 minutes, flipping halfway through until firm and golden brown.
