  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 2 cups Japanese short-grain rice
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ cup tonkatsu sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ketchup
  • 1 cup shredded cabbage
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Pickled ginger (optional)

Instructions

  1. Rinse and soak the rice in water for 30 minutes.
  2. Cook the rice: bring to a boil, simmer covered for 15 minutes, then let sit for 10 minutes off heat.
  3. Pound the chicken to an even thickness, season with salt and pepper.
  4. Set up a breading station: flour, beaten eggs, and panko.
  5. Bread the chicken: dredge in flour, dip in eggs, then coat in panko.
  6. Heat oil in a skillet over medium heat and fry the chicken until golden brown (4–5 minutes per side).
  7. Let the chicken rest on paper towels before slicing.
  8. Assemble bowls with seasoned rice topped with sliced katsu, shredded cabbage, green onions, sesame seeds, and drizzle with tonkatsu sauce.
