  • 1/4 cup unsalted sweet cream butter (softened) for filling
  • 1/2 cup smooth peanut butter for filling
  • 1 1/2 cups powdered sugar for filling
  • 2 tablespoons whole milk for filling
  • 1/4 teaspoon pure vanilla extract for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix flour, baking soda, and salt. In another bowl, cream softened butter and brown sugar until fluffy.
  3. Add peanut butter, egg, and vanilla extract to the creamed mixture; blend well.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Roll dough into balls about 1 inch in diameter and place them on parchment-lined baking sheets.
  6. Bake for approximately 10 minutes until edges are golden; let cool on sheets.
  7. For the filling, mix softened butter and peanut butter; gradually add powdered sugar and milk until smooth.
  8. Spread filling between two cooled cookies to make sandwiches.
