  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 15-oz tub ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • Fresh basil and parsley
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat the oven to 400°F (204°C). Halve the bell peppers, remove seeds, and place them cut-side up on a parchment-lined baking sheet.
  2. Brush the peppers with olive oil and bake for about 20 minutes until softened.
  3. While baking, microwave spinach until wilted, then chop it finely.
  4. In a mixing bowl, combine the chopped spinach with ricotta, mozzarella, parmesan, green onions, herbs, eggs, salt, pepper, and spices.
  5. Fill each pepper with the ricotta mixture and sprinkle breadcrumbs on top mixed with oil.
  6. Bake at 350°F (176°C) for an additional 30 minutes until golden brown.
