  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (seeded and minced, optional)
  • 1 lime (juiced)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon cilantro (chopped)
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Cayenne pepper (optional)

Instructions

  1. In a bowl, mix the shrimp with olive oil, paprika, garlic powder, salt, pepper, and cayenne pepper if desired.
  2. Prepare the corn salsa by combining thawed corn, diced red onion, jalapeño (optional), cilantro, lime juice, and salt in another bowl.
  3. Preheat the grill over medium heat and grill the shrimp for 2-3 minutes per side until pink and cooked through.
  4. For the creamy garlic sauce, whisk together mayonnaise, sour cream, cilantro, lime juice, garlic, salt, and black pepper until smooth.
