  • 1 pound ground chicken breast
  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini
  • Fresh dill

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the rice as per package instructions until fluffy.
  3. Slice bell peppers in half and remove seeds; place cut side up in a baking dish.
  4. In a skillet, heat olive oil over medium heat and cook ground chicken with salt and pepper until no longer pink.
  5. Add diced onion, minced garlic, and zucchini; cook for an additional two minutes.
  6. In a mixing bowl, combine cooked rice, chicken mixture, tomatoes, olives, half of the feta, and dill.
  7. Stuff each pepper with the filling, sprinkle remaining feta on top, and pour water into the baking dish before covering with foil.
  8. Bake for 40 to 45 minutes until peppers are tender.
