  • 1 pound large shrimp (peeled and deveined)
  • 4 tablespoons unsalted butter (or olive oil)
  • 4 cloves garlic (minced)
  • 1 teaspoon lemon juice
  • ½ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss shrimp with minced garlic, lemon juice, salt, and pepper until well-coated.
  3. In a saucepan over medium heat, melt the butter and stir in half of the grated Parmesan cheese.
  4. Pour the melted mixture over the shrimp and toss to coat. Spread evenly on a baking sheet.
  5. Roast in the oven for about 8-10 minutes or until shrimp are pink and opaque.
  6. Remove from the oven, sprinkle with remaining Parmesan cheese and chopped parsley, then serve hot.
