  • 1/2 cup amaretto liqueur

  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1 package ladyfingers
  • Cocoa powder for dusting

Instructions

  1. In a mixing bowl, combine mascarpone cheese and heavy cream. Beat until smooth and fluffy.
  2. Mix in amaretto liqueur, cherry juice, and vanilla extract; blend well.
  3. In another bowl, combine sugar and cherry preserves; mix into the mascarpone mixture along with chopped cherries.
  4. Dip ladyfingers in a mix of amaretto liqueur and cherry juice; layer them in a baking dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  7. Chill in the refrigerator for at least 4 hours or overnight before serving.
